Food has been a huge part of my life for a very long time. Everything ticked along very nicely until I hit puberty when I suddenly became attached to the food cupboard. Sneaking food both at home and in work (I worked on both a deli counter and in a sweet shop so opportunities were ample) I soon gained considerable weight. At the age of 17 this peaked at around 161 lbs, which for a girl of 5’ 3” was unhealthy and made me unhappy.
At some point something just clicked and I went into overdrive to get rid of the weight, I did this by going on an extreme calorie controlled diet and exercising for up to three hours a day. I lost 30 lbs in six weeks and my periods stopped for three months as my body started to shut down. In my twenties my weight continued to rise and fall until my thirties when I was diagnosed with Crohn’s Disease and PCOS. They gave me many tablets but I found a much better way to control it, and it happened totally accidentally.
Within weeks of following a healthy Plant Based diet (for the love of animals, not my body) I came of all medication, my weight stabilized for the first time in my adult life and I finally felt healthy and happy (I also got pregnant!). Although I became vegan for animals, what I found was that my whole body started to benefit, and it was then I became interested in learning more about this diet and the way in which it helps bodies heal from a variety of problems, from weight issues to chronic disease.
I am a certified Holistic Health Coach after training at The Institute for Integrative Nutrition and I hold a certificate in Plant Based Nutrition from eCornell (based on T Colin Campbell’s ‘China Study’). I have also taken courses in Raw Food preparation, Vegan Cookery and Macrobiotics. Aside from the love of food, I love running and spending time with my animals at home.
